Dessert isn’t really a thing during Whole30. A big no-no is finding ways to create “compliant” versions of your favorite treats. None of this cauliflower pizza crustcrust, coconut milk ice cream nonsense. Just straight up un-fun food. They call it “having sex with your pants on“. Well I see your fun-free food and raise you pineapple. With MINT. I know, mind = blown.
I went for dinner at a friend’s house on Saturday night and wanted to contribute something (typical Sarah contributions usually range from salami to chocolate cheesecake to 3 bottles of wine). I wanted to bring something that I could eat but that would also be enjoyable for the whole group. So I decided to leave the chia pudding in the fridge. Instead I julienned some mint, sprinkled it over some freshly sliced pineapple, and Bob’s your uncle, Whole30 “dessert” for everyone.
When this diet is over I intend to blend both of those ingredients with tequila, or vodka (or both?) as a reward.
Pineapple Mint Salad
INGREDIENTS
- Pineapple
- Mint
- Literally nothing else
METHOD
- Chop pineapple (or buy it pre-chopped)
- Chop mint
- Sprinkle mint over pineapple
- Bask in glory at the bright colourful treat you just created
